Hope everyone had a great weekend and hoping many of you have a short work week with July 4th coming up this Friday. 🙂
Tommy and I ran 11 miles yesterday morning and we are both still a little sore and tired from that this morning. It was a little hard to wake up… I’m hoping a Zumba class I’m taking this evening will help stretch and sooth my muscles a little bit.

Yesterday I made a delicious salad, a Watermelon Feta Salad to be exact that I wanted to share with you. Not only was it so easy to put together, the salad provided a naturally sweet, tasty, and refreshing snack throughout the day! I also think it would make a wonderful July 4th BBQ side. 🙂
I followed the original recipe to the “T” EXCEPT I didn’t add olive oil – because I realized a little too late we were out of it!
Ingredients
- 6 cups cubed watermelon
- 1 cup crumbled feta cheese
- ¼ cup thinly sliced red onion
- ¼ cup chopped fresh mint
- ¼ cup fresh lime juice
Directions
- Combine watermelon, feta cheese, red onion, and mint in a large bowl.
- Pour the lime juice and olive oil over the watermelon mixture and toss gently to coat.
- Serve immediately.
Yield:Â 6-8 servings
